Grilled Fish Tacos

Cumin-and-chili fish grilled hot and flaked into warm corn tortillas with cabbage and a quick lime crema.

Ingredients

  • 1.5 lb fish fillets (see suitable species)
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Juice of 1 lime, plus lime wedges for serving
  • Salt to taste
  • 8 small corn tortillas
  • 2 cups shredded cabbage
  • 1/2 cup sour cream or mayo thinned with a little lime juice
  • Salsa or pico de gallo

Method

  1. 1Toss fillets with oil, cumin, chili powder, lime juice, and salt.
  2. 2Grill over medium-high heat (or sear in a hot pan) until the fish reaches 145°F and flakes easily, about 3–5 minutes per side depending on thickness.
  3. 3Flake the fish into large pieces.
  4. 4Warm tortillas, then fill with fish, cabbage, a drizzle of the lime crema, and salsa.
  5. 5Serve with extra lime wedges.

Only cook legally harvested fish. Confirm current size limits, seasons, and possession limits with VMRC (saltwater) or DWR (freshwater), and check Virginia fish consumption advisories for the waterbody you fished.
