Ingredients
- 1 1/2 lb mackerel or bluefish fillets, bloodline trimmed
- Juice of 2 lemons and 1 orange
- 2 tbsp olive oil
- 1 tsp coriander, 1/2 tsp red pepper flakes
- Sliced red onion and herbs to finish
Method
- 1Marinate trimmed fillets in citrus, oil, and spices for 20 minutes — no longer.
- 2Preheat the grill to high and oil the grates well.
- 3Grill skin side down 4–5 minutes until the skin releases cleanly.
- 4Flip once and finish 3–4 minutes.
- 5Confirm 145°F, then top with onion and herbs.
